How To Make Sour And Spicy Shredded Potatoes

The practice of Sour and spicy shredded potatoes


Materials  

Large potatoes - 1 pc

Green pepper - 1 pc

Small red pepper - 2 pieces (usually with dried red pepper)

Garlic - a few cloves

Green onion ginger - a few slices

Oil - 3 tablespoons

Sichuan pepper - a small pinch

vinegar - 3 tablespoons

Salt - 1 tsp

chili oil - 1 tablespoon


Method

Step 1

Wash the potatoes and scrape off the skin with a scraper, shred the green peppers, cut the small red peppers a few times, and chop the garlic.

How to cut potatoes: Cut a few slices on the long side of the potatoes so that they become a flat surface, buckle them on the cutting board, and then continue to slice them like this.

Cutting shredded potatoes does not require a certain amount of fineness, too fine is easy to sticky, but not good, just to be evenly thick.

Step 2

Cut the slices with even thickness and then continue to shred, and it will be easier to cut them. Soak the shredded potatoes in cold water. When the shredded potatoes are put in cold water, the water should be changed several times to wash off the starch, so that the fried shredded potatoes are crispy, refreshing and non-sticky

Step 3

Pour oil into the pot, put in the peppercorns and fry them over low heat until fragrant, and remove the peppercorns. Then add green onions, ginger and small red peppers to stir-fry until fragrant, pour in the drained shredded potatoes and stir-fry evenly, immediately add vinegar and continue to stir-fry for about 1 minute, add green peppers and salt, stir-fry evenly, add garlic, and chili oil, mix well and turn off the heat
